سليولوز: السليولوز Cellulose هو سكر عديد ويكون المركب الأساسي في الخلايا النباتية وبالذات في جدار الخلية النباتية, وهو كذلك موجود في جميع أنسجة النباتات، والسليولوز مثل النشا هو عبارة عن كربوهيدرات معقدة ويتم الحصول على سليولوز القطن من ألياف القطن. وهو يتكون من مئات أو حتى آلاف من الجلوكوز. السليولوز يعتبر من أوفر المركبات الكيميائية على وجه الأرض واكثرها رواجا. حيث يشكل قرابة 33% من بنية النباتات, وفي نبات كالقطن يمثل 80% من بنيته, و 50% في الخشب. ويشكل المادة الخام الأساسية في كثير من الصناعات المختلفة مثل صناعة الورق واللدائن والمنسوجات النباتية والمتفجرات عالية القدرة. السليولوز من الكربوهيدرات -السكريات- لكن طعمه ليس حلواً كباقي السكريات.. وهو يعد من السكريات العديدة المكوّنة من نوع واحد من السكريات الأحادية -الجلوكوز-، هذا ويوجد السليولوز وسكريات معقدة أخرى في جدران خلايا النباتات ويمتاز السليولوز كما السكريات المعقدة الأخرى بعدم قابليتها للذوبان في الماء وعدم نفاذيتها من خلال أغشية الخلايا وكان يعتقد بان الزائدة الدودية تقوم بهظم مادة السيليلوز في الوقت الماضي. في عام 1838 أطلق أنسيلم باين Anselme Payen اسم السيلوز على المادة التي تتألف منها جدران الخلايا النباتية. ولكن السيللوز لا يوجد في الطبيعة بحالة نقية أبدا. وتعتبر ألياف القطن هي الأنقى من وجهة نظر سيللوزية، فهي تحتوي على ما يقارب 5 % فقط من المواد الغريبة بعد وضع المحتوى المائي بعين الاعتبار. ولكن في الخشب وسوق النباتات والأوراق وما شابه يرتبط السيللوز بمواد أخرى مثل اللغنين وما يسمى افتراضا بالهيميسيللوز وبكميات ذات وزن ملحوظ. تصل نسبة السيللوز في الخشب 40 – 55 %، 15 – 35 لغنين، 25 – 40 % هيميسيللوز. و إن الهيميسيللوز لا يتشابه مع السيللوز من ناحية تركيبه، وهو يتألف من مجموعة -السكاكر العديدة – ما عدا البكتين- والتي تبقى مرتبطة مع السيللوز بعد إزالة اللغنين. و إن الخشب بعد إذابة اللغنين يسمى هولوسيللوز. ولعزل الهيميسيللوز عن الهولوسيللوز يجب استخدام المحاليل القلوية. و يسمى السيلوزالتجاري باسم R10 وهو يوازي عمليا اسم ألفا – سيللوز. مصادر السيللوز الطبيعية هي : الألياف الباتية والتي ينتج منها مليارات الأطنان سنويا عن طريق التركيب الضوئي. بعض المتعضيات لبحرية مثل تيونيكاتا :Tunicata. السيللوز الكوني والذي يمكن جمعه بمقاديرضئيلة وبكلفة عالية من الفضاء.

ميثيل السليولوز: ميثيل السليولوز هو مركب كيميائي مشتق من السليولوز. وهو مسحوق أبيض محب للماء في شكله النقي وينحل في الماء البارد دون الحار لتعطي محلولأ لزجًا صافيًا أو هلامًا. ويباع ميثيل السليولوز بأسماء تجارية مختلفة ويستخدم كمثخن ومستحلب في الأغذية ومستحضرات التجميل المختلفة، وفي علاج الإمساك والإسهال. وهو لا يهضم مثل السليولوز وليس سامًا ولا يسبب الحساسية.

غلوتامات أحادي الصوديوم: غلوتامات أحادي الصوديوم مركب كيميائي له الصيغة C5H8NNaO4، ويكون على شكل بلورات بيضاء.وهو ملح الصوديوم الأحادي لحمض الغلوتاميك. يستخدم كمضاف غذائي. ويسمى أيضا بE621.يعتبر غلوتامات أحادي الصوديوم أحد الأحماض الأمينية غير الضرورية المتوافرة بكثرة في الطبيعة. تصنف إدارة الأغذية والأدوية الأمريكية ملح MSG على أنه طعام معترف به كآمن عموما -GRAS- ويعتبره الاتحاد الأوروبي من المواد المضافة إلى الطعام. ورمز HS لملح MSG هو 29224220 أما رقم E فهو E621. تعطي غلوتامات MSG نفس طعم الأومامي للغلوتامات من أطعمة أخرى. فالمادتان متطابقتان من الناحية الكيميائية. ويقوم مصنعو الأطعمة الصناعية بتسويق واستخدام MSG كمحسن للنكهة نظرًا لأنه يقوم بموازنة ومزج وتقريب الإحساس الكلي للمذاقات الأخرى. وتشمل الأسماء التجارية للغلوتامات أحادي الصوديوم AJI-NO-MOTO® وVetsin وAc'cent
